What is kombucha?

Kombucha is a fermented tea that has gained popularity in recent years for its potential health benefits and unique, slightly fizzy flavor. But what exactly is kombucha and how is it made?


Kombucha is made by adding a symbiotic culture of bacteria and yeast, also known as a SCOBY, to sweetened tea. The SCOBY feeds on the sugars in the tea, converting them into various organic acids, such as acetic acid and gluconic acid. This process is known as fermentation.


The fermentation process takes anywhere from one to four weeks, depending on the desired level of fermentation and the temperature of the room. During this time, the SCOBY will grow a new layer on top of the tea, forming a disk-like shape. This layer can be removed and used to start a new batch of kombucha, or it can be discarded. Once the kombucha has fermented to the desired level, it can be flavored with fruit juice, herbs, spices, or other flavorings.


While kombucha has been enjoyed for centuries in various parts of the world, it has only recently gained mainstream attention. In the GCC and broader Middle East, kombucha is not yet as known as in Europe and the US, but we at ME Kombucha want to change that!


One of the main reasons kombucha is becoming increasingly popular is due to the rise of interest in its health benefits. One of the most commonly cited benefits is its potential to improve gut health. This is because kombucha is a source of live bacteria and yeast, known as probiotics, which can help balance the microorganisms in the digestive system. For example, some people believe that kombucha can help boost the immune system, improve mental clarity and mood, and even aid in weight loss. While there is some preliminary evidence to support these claims, more research is needed to fully understand the potential health benefits of kombucha.


Apart from its health benefits, kombucha has likely gained increasing traction because of its great taste. Kombucha has a slightly fizzy, slightly sweet and sour flavor that is often compared to apple cider vinegar. The taste of kombucha can vary depending on the type of tea and sugar used in the fermentation process, as well as any additional flavorings that are added. Some people describe the flavor as refreshing and effervescent, while others find it to be an acquired taste. The flavor of kombucha can also vary from brand to brand, with some being sweeter or more sour than others.
